- Sieve 200 gms of white flour, 4gms of baking powder, 2 gms of sodium bicarbonate and 10 gms of vanilla sugar together.
- Beat 2 eggs, add 250 gms of raw sugar, 1 dl of milk, 90 gms of sunflower oil, and 2-4 gms of fine grated lemon yellow skin. Mix this all up thoroughly.
- Add your flour mix to the second egg mix till you have a nice muffin mixture.
- I used 250 gms of some frozen berry mix which would be ideal, or just some fresh blueberries, you decide. Add to the muffin mix.
- Pour in muffin forms allowing each form to get equal amt of beeries.
- Bake in oven at about 160°-170° for 20-30 mins. Make the Skewer check and allow to cool before you gulp them down.
- This makes 8-10 portions
