- This entry doesn't need much of explaining, and i am happy so. ha ha. I will try to show you my east meets west version of naan- a leavened flat bread from India.
- Dissolve 1 tspn of yeast in a dl of lukewarm water and let to ferment for 10 min.
- You need 1/2 tspn of chopped garlic, Cumin seeds, chopped chilies. 1 tspn of salt and sugar. 2 tablespoon of ricotta cheese and olive oil. Some lemon juice and ground black pepper.
- Add this all up to the white flour with about 3/4th of a cup lukewarm water.
- Knead to a smooth dough and let to rest in a warm place for 2-3 hours. Knead the dough again, for 1-2 mins and divide to 8-10 parts.
- Roll into oval shapes, dusting with flour occasionally. Now sprikle some more olive oil on it, add some slices of black olives on top and bake in a preheated oven ( 250°- 300° ) for 4-5 minutes. When it rises, it's ready. Serve with some fresh tomato chutney.
- This recipe makes 8-10 portions.
