PLUM FLAN CAKE-SWISSMADE


  • Well well, the swiss are proud of their chocolates, watches, cheese etc etc, but i kinda like this invention a lot more.
  • The dough(1/2 kg) needs 250g of white flour, 140g butter, 1dl water. First mix the cold butter with the white flour to a consistency of grated cheese. Add 5g of salt to water, let it dissolve and add to the butter-flour mixture. Make a dough as fast as possible but don't work it too long. It might get rubbery after baking. let it cool for one hour in the fridge.
  • The flan mixture(1/2 ltr) needs about 65 gms of sugar and cream, 2,5dl milk, 25g of vanille custard powder, 20g of white flour and 1-2 whole eggs. Mix this all up, adding the flour and the custard powder at the end.
  • Butter the baking tray, Roll the dough to 2mm and cover the tray with the dough cutting the ends out. if your tray has holes, you don't need to poke holes in the dough with a fork. Spread some ground hazelnut to the dough, then those plums (which have been cut into halfs or quarters) and then pour the flan mixture on top.
  • Bake for 15-20 minutes in a preheated ofen at about 160°C - 170°C. Well check it before and after..let it bake for another 5 so minutes if needed.
  • Allow to cool when done and glaze with some warm abricoture.
  • This recipe makes a whole tart.
