VITELLO TONNATO M' WAY


  •  Flank of veal or shoulder ( 1 Kg),1 small tin of tuna, 2 Tbsp mayonnaise, 3 pickled anchovies, 1 Tbsp lemon juice, 1 Tsp worcestershire sauce, Pinch of paprika powder, chilies,  salt and pepper, 5- 6 lemon wedges, 1 Tbsp capers, red onions, rocket salad, 1 Tsp olive oil
  • Cook your veal, either braise it or cook in an oven- i love both ways. Meanwhile make your sauce with Tuna, a little bit of chili, anchovies, lemon juice, worcestershire sauce, paprika powder and a little bit of veal stock ( Either use the lost juices if done in the oven or use the stock if braised). Blend this all up, Add some mayonnaise at the end without blending( don't want the sauce getting to watery)
  • Cut your meat into thin slices, add the sauce onto it and garnish with rocket salad, onion rings, capers, lemon wedges ,some olive oil. I personally like a sprinkle of balsamico essence or reduction to it. Serve with some nice olive ciabatta.
