BEBINCA


  • This is a nice goan / portuguese dessert. I love it. It tends to be real sweet sometimes, I'll show you how to make it just right..
  • Mix 600 ml of coconut milk with 340 gms of sugar. Make some caramel with 100 gms of sugar and add to the coconut mixture. Please note that your caramel should be mixed with some water (4 tspn) so it mixes well with the coconut mixture.
  • Add 8 to 9 egg yolks, some nutmeg powder and mix well. Now add 150 gms of sieved flour and mixed thoroughly, sieve the whole thing. Your batter is ready.
  • You need about 100 gms of ghee or clarified butter. 
  • Butter your form and add a dab of your batter to the form and bake at about 220°C for about 7-8 minutes. Spread a little ghee on the baked Layer. It is usually held longer in the ofen so it gets a nice caramel type colour. I like it a bit lighter. Continue adding parts of your mixture, baking and making layers. Cool down and cut into slices.
  • This recipe makes 20 - 30 slices.
