SPAGHETTI WITH QUORN BOLOGNESE AND SOME CHIANTI


  • Children love SPAGHETTI and bolognese and since i was baby sitting, why not?? I had them bluffed. They found it as delicious as the one with meat in it.
  • Of course the 8 year old chianti was for me.This goes so well together.
  • Fry 400 gms of minced quorn. Add 30 gms each, of carrots and celery, all cut into fine dices or cubes (brunoise).
  • Add your 30 gms of chopped onions and 4-5 gms of chopped garlic to it and fry evenly.
  • Now add 40 gms of tomato purée and roast everything on a mild flame.
  • Add 2-3 dabs of red wine to it and let reduce.
  • Add 3 dl of vegetable stock, some thyme, oregano, bayleaves and cook  the whole thing till you have a semi thick mixture, stirring all the time.
  • Add 2 chopped tomatoes to the whole thing and cook for another 1-2 minutes.
  • Season with salt/pepper and a dash of olive oil.
  • Serve with some grated Parmesan.
  • This recipe makes 3-4 portions of sauce.
