GRAND MARNIER PARFAIT

  

  • This is my favourite, I really enjoy making this. 
  • Whip 0,8 ltrs of cream and keep cool.
  • Whip 8 egg yolks and 2 eggs with 300 gms of sugar, 50 ml of water, 150 ml Grand Marnier on a bain marie.
  • Don't let the egg mixture boil, doing so, by taking it off the heat occasionally
  • Beat till you get a smooth thick mixture, which is also gonna double in size because of the air you beat in.
  • Take off the heat and whip cold on some ice.
  • Add your whipped cream and fill in a terrine form.
  • Freeze for about 5-6 hours, cut into slices and serve with some Grand Marnier, fruits etc etc.
  • This recipe makes 10-16 portions
