BARBARA'S PHILADELPHIA CHEESE CAKE




  • I had the prestige to make and taste a real nice cheese cake, american style or should i say, Barbara's style, here goes
  • Melt 125 gm of butter in a pan, add 150 gm of crumbed whole corn biscuits to it, till it absorbs all the butter. This makes the the base for the cake.
  • Press the base mixture into a cake form with baking paper.
  • Mix 800 gm of Philadelphia with 100 gm of sugar, 2 tbsp wheat and a pinch of salt. Add 3 eggs to the mixture and mix thoroughly. Add 6 gm of lemon zest and juice of half a lemon to it, blend in and your mixture is ready
  • Grease the sides of your cake form with butter and pour the cheese mixture onto the biscuit base. Smoothen out the cheese with a scraper.
  • Bake in oven, first 200° for 10 min and then at 110° for 35 min.
  • Allow to cool for at least 5 hours.
  • This makes 10 portions.
  • I tried making a stevia version of this cake, was also good, just don't like the taste of stevia. So anybody wanting to try the stevia version, it's the same recipe, just remember that 2 drops of stevia equals 5 gm of sugar and of course, you need whole corn non sugared biscuits for the base. Ideal for patients who are diabetic.
