- I prefer chicken legs to chicken breasts( and i am talking about chicken! ha ha), as it is much more luscious even if you forgot it a minute too long in the ofen. It gets much better with sauces. This is great for summer, easy to make and looks awesome.
- Chicken legs cut in two, seperating the thighs from the legs, Tomato sauce, green string beans, black olives, lemon, more garlic and onions, carrots or pumpkin, chili, chunks of grilled courgettes, brinjal and capsikum,some herbs and some olive oil.
- Make some great tomato sauce using some olive oil, chopped garlic and onions.
- While you tomato sauce is cooking, marinate the chicken with some olive oil, paprika powder, some lemon juice, some herbs like thyme and rosemary, salt and pepper. Preheat your ofen 200 degrees and cook the chicken half for about 7-8 minutes. i would prefer grilling them (also half done), and since you have to grill the brinjal, capsicum and courgettes.
- Blanche the carrots and beans, the pumpkin doesn't need precooking if your using one instead. Cut the onions into quarters, leave the garlic and chili whole, grill them too. it adds to the effect. well if you don't have a grill or a oven, this can be done very simply in a frying pan or a small paella pan.
- The chicken can now be placed in a dish ,add all your vegetables. Add the tomato Sauce and garnish with chili, herbs and some lemon rings.
- It all goes into the oven again for 6-8 minutes at about 180-200 degrees. A lid would be also suited if you don't have an oven. just do an occasional check so it doesn't burn.
