BOEUF STROGANOFF WITH SHITAKE


  • Although this recipe is best with tenderloin, i prefer to make a low budget dish with tastes all that good. It takes a bit longer but it is great to have all that smell in your house and have people asking questions like what´s cooking? wow, smells good! etc
  • Well you could use 500 gms of breast or any beef stew meat which needs cooking.
  • What you need other than meat is- 1 red capsicum, 1 onion, 400 gms of shitake mushrooms, 100 gms champignons, 5 pickled cucumbers, 1/2 demi glace, 2 Tbsp sour cream, 2 Tbsp cream.
  • Cut your meat, pickled cucumbers, capsicum into strips, your shitake and champignons in quarters, and chop some onions.
  • Sauté your meat first always using a bit from the chopped onions, the same with mushrooms and capsicum. Season.
  • let them drip off their juices with a strainer as you could use that for the sauce too. Use this juice with some demi glace and stew the meat for as long as the meat gets eatable. Get the meat out, cool it. 
  • It´s time for the sauce now..the rest of the sauce without the meat needs some reduction, when it gets semi thick, add in the fried mushrooms. Add some sour cream and some cream. Mix and then add in the cooked meat and capsicum and pickled cucumbers. Season. Some chopped parsely is always welcome. Mmmhhh
