GAME AND SOME LOVELY WEATHER FOR DUCKS


  • Making duck breast is so simple, People tend to get too excited, overmarinating in the case and cooking it till it gets so rubbery...God help me! 
  • I would rather go beserk with the orange sauce or some jus mixed in with balsamico or some fancy alcohol, but my duck is gonna stay simple.
  • Rub in some salt and pepper on both sides of the breast. Then render the skin side, Using no oil at all. Use this fat which oozes out of the duck to fry potatoes etc. The fry your duck on both sides, giving it a nice caramel brown colour.
  • Cook in the oven at about 200° degrees, for about 4- 5 min ( depending on how fat your duck ist). The internal temperature should be kept at 50°-55°. This way it stays medium and has a nice rosy colour to it, making it more desirable. If you don't have an oven, Fry your game in a pan for about 2-3 min (again depending on how heavy your duck is) on both sides, on a moderate heat.
  • Use the lost juices for your sauce. Cut into slices. Nice!
  • Again, don't sport these cruel games, even if your enjoying it. Respect what nature has and be content with what you've got.
