PUMPKIN RAVIOLI


  • It's been a while now since my last blog entry. Well this time it's ravioli.
  • it's easy- the dough needs about 150g of white wheat,150g of durum wheat semolina, 2 eggs, 20g of olive oil, safran,salt and pepper.
  • knead an elastic dough  and allow to rest in the fridge for about 1 hour.
  • The filling for your ravioli is up to what you want, the dough itself could be made with a lot of ingredients like basil, beetroots, spinach etc etc. The world wide web is full with them.
  • My filling has been made with Rouge Vif d'Etampes pumpkin, pine nuts, sunflower seeds, butter, parsely, ground nutmeg, salt and pepper. Cook the pumpkin and mix all ingredients to a thick mixture. you could also add some Ameretti to it- just a bit. :-)
  • Follow the pictures, that's all to it. Serve with some butter nut sauce and some freshly grated parmesan. keep it simple.
